Minestrone comes from the Italian word "minestra" meaning soup, and it's one of my favorite!
It's a very tasty recipe for fasting!
- 3 tablespoons olive oil
- 2 onions
- half a cabbage created (or called milan)
- 2 diced carrots
- 2 diced zucchini
- 2 strands of celery
- 2 diced potatoes
- 4 large tomatoes
- 100 gr white beans kept overnight in water
- 1 liter and 200 ml of boiled juice from a chicken
- 100 g of pasta for soups
- 4 tablespoons grated Parmesan cheese (an option)
- juice from a lemon
Preparation time: less than 90 minutes
Minestrone RECIPE PREPARATION:
Cut the onion and cook it for about 5 minutes, then add the chopped vegetables together with the boiled juice or hot water with knorr (apart from the potatoes, which we will put after about 30 minutes from the beginning of cooking). Then, after about 30 minutes, we put the rinsed beans in water and strained, and let them boil slowly, covered, for about another hour, until the beans are cooked. Finally, add the pasta and leave for about 8-10 minutes, then add salt and lemon to taste.
We put the Parmesan cheese on the plate, but of course it's optional.
Instead of boiled chicken juice, you can put knorr cubes.
For a more intense scent, you can put a few sheets of fresh basil (basil) on the plate.
Instead of white beans, you can replace them with green beans, beans that boil faster, or sometimes I add red, Mexican beans.
