Dumplings with cheese

In a bowl put flour, make a hole in the middle and add 1 egg, 1/2 teaspoon salt, 1/2 glass of milk and 1/2 glass of water. Knead the crust by hand until it no longer sticks to the fingers. Let it rest for 20-30 minutes.

Meanwhile, prepare the filling:

mix 300 g of cheese, 2 eggs and salt.

With the rolling pin, spread a thin sheet of dough, about 2 mm thick. Use a glass to cut discs.

Put a teaspoon of cheese on each disk of dough, then glue.

The dumplings are boiled in a pan with boiling water and salt. Boil for 10-15 minutes, stirring with a wooden spoon. From the moment they rise to the surface, the dumplings are boiled for another 4-6 minutes. Strain and drain excess water.

Cheese pies and puff pastry with telemea or bellows cheese

Cheese pies and puff pastry with telemea or bellows cheese. The recipe for pies with telemea (or wheat) is a simple one and available to anyone. The filling is prepared in 2 minutes and can include several types of cheese, depending on your preferences and what you have at hand.

These cheese pies are very popular with Romanians and are served cold or hot, as an appetizer or snack, with a brandy or a pint of beer. Of course they are much tastier if they are made from homemade puff pastry dough (recipe here). It can be portioned and frozen and used as needed.

If you don't have time to make puff pastry at home, I recommend the fresh puff pastry dough from Kaufland that is with BUTTER! (from refrigerators, not freezers). Or you can make a homemade puff pastry with fresh pork sauce (haiose dough) & # 8211 see here.

The filling should be creamy but firm, not crumbly. I mixed cow's cheese (well drained) with telemea and grated cheese + 1 egg. If you want a more spicy note, you can also put kneaded or bellows cheese.

These trills can also be made with leavened dough & # 8211 will come out fluffy & # 8211 recipe here.

I used approx. 500 g of puff pastry dough divided into 2 sheets. From the first I made 15 pies (squares) and from the second 25 wheat ones.

For starters, boil the rice in 3 cups of water and a little salt.

When it is cooked (about 10 minutes) let it cool a bit and then put it in a bowl.

Add flour, salt, pepper, pepper paste, grated cheese and a little smoked paprika. Stir until smooth.

To be as efficient as possible, first we shape the meatballs, then we fry them.

With a wet hand we shape the meatballs inside which we put a piece of cheese. We pass each one through a beaten egg and then through the breadcrumbs and fry them in oil, turning them on all sides until they are nicely browned.

We take them out on a paper napkin and serve them as I wrote with a salad and a yogurt sauce. You can also serve them with natural potatoes.

Forget how to spread the cheese :)

You can serve them both hot and cold.

Basmati rice with vegetables

First of all, it's good to mention that this food is not risotto, it's not pilaf. It's just a rice dish, the only rice I found in the house before unpacking and the last boxes after moving. Basmati rice cooks faster than risotto rice, which is why I managed to finish yesterday's lunch in less than 15 minutes. If you want to turn this food into a vegetarian or fasting dish, all you have to do is not put butter (you just limit yourself to oil), don't put soup (the water is good enough) and don't put the cheese at the end (actually , never put it at the beginning).

For 2 servings I used 120 grams of basmati rice, half a kapia pepper, two cloves of garlic, two small onions, a few peas. eat everything and a celery stalk. I chopped them finely.

I melted half a tablespoon of butter with a little olive oil.

I chose the spices for my food: fenugreek seeds, Arabic cumin seeds, one teaspoon each.

I put the seeds in hot butter and browned them for half a minute.

I added the chopped vegetables and increased the heat for two minutes, stirring constantly in the vegetables.

I washed the rice and put it in the pan. I mixed well.

I put hot (chicken) soup over the rice. One polish at a time, as she was absorbed.

When I found that the rice was cooked enough for my taste, I made the cheese. I used Gruyere.

I incorporated it into the rice.

That was all.

Stay healthy.

The rice is prepared according to the instructions on the package.

Drain and allow to cool.

Put the rice in a bowl with grated cheese and beaten egg and mix until a homogeneous composition is obtained.

Take the composition in the palm and form a ball.

Drill a hole and put a cube of cheese.

Fry in hot oil.

Arancini cheese balls they are easy to prepare and delicious!
