Braised Lobster


Ingredients for Making Braised Lobster

Cooking Braised Lobster:

Step 1: take the lobster (lobster).

We take a huge pan, pour water there and put on a big fire. We wait until the water in the pan boils and then spread the lobster there. Cook them there approximately 4 minutes. Then we drain the water into the sink, throw the lobster into a colander and rinse thoroughly with cold water. Then we take the lobster, use a sharp knife to open it, take out the meat and put it in a plastic bag. We put the meat in the refrigerator for now. Step 2: prepare the sauce.

The next step we will have is making the sauce. Take a deep saucepan and heat in it 1/2 part butter. On the board, the onion is finely chopped and pour into a pan with oil. Cook onions there until soft. Here we add our tomato paste and spread the lobsters. Then fill it all with cognac and make the fire brighter. Bring everything to a boil and add 750 ml water into the pan. We cook everything and wait until the liquid boils to a level in 375 ml. Now we wait some time for the sauce to cool, and then press (with your hands, a spoon - whatever is most convenient) on the cooked parts of our lobster to squeeze the juice out of them. For your convenience, you can extract all parts of the lobster and then squeeze the juice into the pan.

Step 3: prepare the vegetables.

We leave our sauce to cool completely, but for now we will take care of our vegetables. All vegetables are thoroughly washed under running water, and then, if necessary, with a knife, we peel them from the skin. Pour water into another pan, salt it a little and set it on the fire - bask. When the water boils, put all the vegetables there and cook them there 1-2 minutes. When the vegetables are cooked, take them out of the pan and put them in a slotted spoon. After all the vegetables are in our slotted spoon, we immediately lower it into very cold, almost icy water, so that they retain their color for as long as possible. Then add our lobster meat to the saucepan and bring it to a boil again. Cook this way lobster meat somewhere three minutes. add the cooled vegetables to the same place and continue to cook it all 2 minutes.

Step 4: serve the braised lobster.

When everything is cooked with us, put half the lobster tail on a serving platter. put lobster meat on it, and distribute the vegetables as evenly as possible around the meat itself. Now we taste everything and, if necessary, salt, pepper and pour a little lemon juice. We spread around the cut corvel with vegetables and immediately serve it on the table. Enjoy your meal!
