Cooking kastybaya with mashed potatoes:

Step 1: prepare the potatoes.

Using a knife, peel the potatoes and then - rinse well under running water. On a cutting board, cut the ingredient into small pieces and transfer to a medium saucepan. Pour ordinary water into the container so that it completely covers the potato slices. We put the capacity on a big fire, and after boiling water - we make the fire less than average. Cook potatoes under the lid for 20-30 minutes. Attention: we check the degree of readiness of the component using a fork, since the cooking time of a vegetable depends on its variety. Then we drain the water, holding the pan with the lid with fabric tacks. Using a crush, grind mashed potatoes. Attention: in order to make the filling more tender, you can add in mashed potatoes 1 tablespoon butter and mix well. So, we shift the finished mashed potatoes with a spoon into a deep bowl and set aside to cool to room temperature.

Step 2: prepare the green onions.

We wash the green onions under running water and put them on a cutting board. Using a knife, grind the ingredient into small rings and transfer it into a deep bowl with potatoes.

Step 3: prepare the onions.

With a knife, peel the onions from the husks and rinse under running water. Then on a cutting board we cut the component into two halves, and cut each piece into thin half rings. We put a frying pan on medium heat and pour vegetable oil into a container using a tablespoon. When the oil begins to warm up, make a small fire and put the chopped onion into the pan. With constant stirring with a wooden spatula, fry the ingredient until golden brown. We shift the fried vegetable into a deep bowl with the components of the filling.

Step 4: prepare the filling.

Add salt and black pepper to taste in a bowl with onions and mashed potatoes. Using a tablespoon, mix everything well until a homogeneous mass is formed.

Step 5: prepare the dough.

Using a sieve, sift the flour into a deep bowl. Thanks to this process, the dough is saturated with oxygen, and the cakes are more tender and airy. Add salt and vegetable oil to the container. Then we pour purified water into a small pan and put it on a big fire. When the water begins to boil, turn off the burner and pour boiling water into the flour, and quickly mix everything well with a tablespoon until a lump is obtained from the dough. Then leave for 2-3 minutes the dough is at rest so that it cools down a bit and does not burn our hands. So, we transfer the test product to the prepared in advance kitchen table, powdered with flour. Knead smooth elastic dough with our hands. Attention: if the flour is not enough, then you can add a couple more tablespoons, but with all care so that the dough does not turn out tough. After - we form a "bun" and transfer it back to the bowl. Leave it in this condition. for 20-30 minutesso that the dough can rest and infuse.

Step 6: cook kastybay with mashed potatoes.

The dough and filling are ready. Therefore, you can proceed to the most important stage of cooking. We put the "bun" on the kitchen table and knead the dough several times again. Then we form a thick sausage from the dough and after that we cut it with a knife into small pieces the size of a large plum. From each piece with our hands we form a small "bun." But that is not all! Using a rolling pin, we roll out thin cakes from each small "kolobok", preferably according to the diameter of the pan. We pierce each cake with a fork so that they do not swell in the cooking process. We put a dry pan on a big fire. When the container begins to heat up, make the fire a little less than average and put the tortilla on the pan. We fry the dish on both sides until brown spots appear on the dough. Then, using a tablespoon, put the filling on half the tortillas and cover with the second half. Attention: the test pancake should be hot.

Step 7: prepare the butter.

We spread the butter in a stewpan and put the container on medium heat. With constant stirring with a tablespoon, melt the ingredient to a liquid state.

Step 8: serve kastybay with mashed potatoes.

What delicious is this Bashkir-Tatar dish! Just be sure to serve the skewer with mashed potatoes to the table, pour it with melted butter. Then the tortilla with the filling turns out even tastier, as it is impregnated with the creamy component and becomes very soft and tender. Good appetite!
