Baked salmon meatball recipe it is one of my child's favorites, and I enjoy it very much. Especially for him, I prepare simple, boiled broccoli, over which I put a small cube of butter as soon as I drain it.

The plate remains empty and I don't have to ask him to eat it, as happens with other dishes.

INGREDIENT:
(for 20 pieces & # 8211 4 people)

250 g salmon
1 medium potato boiled in shell
1 very small boiled carrot
parsley
salt
pepper
1 small egg
3 tablespoons flour
breadcrumbs for rolling

For starters, I prepared the grilled salmon, taking care to remove the skin first. I sprinkled a little sea salt on the grill. I left it for about 4 minutes on both sides. The frying time depends on the size and thickness of the salmon piece.

I cut the salmon into small strips and mixed it with the mashed potato with a fork, 1 egg, finely chopped carrot, chopped parsley, 3 tablespoons flour, salt and pepper.

After I homogenized the composition I took a spoonful of it and shaped it between my palms to get some balls. I rolled them in breadcrumbs, then put them in the baking tray.

I sprinkled each meatball with 1-2 drops of oil, then I baked them in the preheated oven at 200 ° C until they turned golden.
Simpler, healthier and better than that I don't think it's possible!

The cooking time depends on the thickness of the piece of cooked salmon - for every inch of thickness it takes 4-6 minutes in the oven. So, if you have a 3 cm thick salmon fillet, it should stay in the oven for about 16 minutes. The oven temperature should be set at 200-220 degrees Celsius.

You can check if the fish is cooked using a fork. If it easily penetrates the fish, it means that it is cooked. If you use a thermometer for cooking, you realize that salmon is cooked when the temperature inside it reaches 60 degrees Celsius.

If you overdo the cooking time of the salmon in the oven, it will dry out too much, which you do not want.

To keep the tasty juices inside the salmon, you can wrap it in aluminum foil before putting it in the oven. In this way, it will cook well, but will retain its creamy and juicy texture.

As for the amount of fish you need for a person, you have to be moderate, because salmon is a fatty fish, so quite filling. A maximum of 250 g of salmon for each guest at the table is more than enough - in general, women consume up to 200 grams.
